Vanilla Cake and Toasted Pecan Coconut Caramel Filling with Vanilla Buttercream Frosting
This 6" triple-layer Vanilla Cake is a gentle twist on an old favorite - The German Chocolate Cake (which isn't German!) - Toasted Pecan Coconut Caramel Filling. I am exploring other flavors of sponge that pairs well with this utterly delicious caramel filling.
Long story short - it tastes good. Maybe not amazing, but good. The filling overpowers the vanilla - which essentially disappears with this flavor combination.
I have been thinking about several other flavor combinations I want to try...so at least I'm headed into an interesting direction.
Preparing this cake was simple...bake the cake, cook the filling, build the layers, and frost with vanilla buttercream.
In the meantime, I have plenty on my cake plate this week.
What a great deal I get... a life partner who loves me, kids I'm crazy about, and sobriety one day at a time.
