The breakdown.
For the first time this season, I saw peaches in the market! I was so excited that I couldn't help myself but to bring some home. Now I know, these peaches are still new and won't be as delectable as the fruit later on, but ... peaches!
What flavors complement a peach? As I thought about it, nearly every fruit considered sounded good. However, when I arrived at blackberries, I knew I'd found a winner for today's baking.
I followed my lemon cake recipe - using 8oz fresh peach puree and 2 c. peach yogurt. I tinted after baking the first batch without tint (always a test kitchen), but over stirred my batter just a wee bit. This recipe is similar to my white cake recipe - barely combine the ingredients with flour; don't over mix.
Heads up - the peach cake is simply delightful! I'll be happy to bake this in layer cake this summer... and maybe use it in a peach shortcake dessert.
I blanched the peaches to ease removing the peach fuzz.
Three to four peaches can easily produce 8oz of puree.
Alton Brown suggests using European butter in cake; American butter on cake.
If there are empty tins for the last of the batter, fill with water to prevent damage to pan.
We preferred the untinted - adding coloring gel after the flour produced an over-mixed batter.
I cored out some of the tinted cupcakes and filled with a blackberry cream cheese fluff...
...then added a fresh berry to some.
I love garnishing with fresh fruit.
The sugar flowers are my indicator there is fluff but no berry in the center.
The peach cream cheese buttercream secret ingredient? Peach yogurt.

I loved baking these cupcakes today. Finding new things in the market, paying attention during our morning walks, and being inspired by people is just part of the creative fun in baking. Heidelberg never fails to produce!
Despite the weather being in a rainy spell, the favorite part of my day is when my life partner and I spend an hour walking ...while holding hands. My heart still jumps a little - like the first time we held hands combined with years of familiarity.
